About

The Fraunhofer Institute for Process Engineering and Packaging IVV plays a leading role in applied research into securing supplies of high-quality food and sustainable packaging systems. The skills required to achieve these aims are brought together under one roof. Around 300 researchers work to develop pioneering products, processes and technologies in the fields of food, packaging, product effects and processing machinery, as well as recycling and the environment. The knowledge that they gather is also transferred to other fields.

Role in the project

The role of Fraunhofer IVV within the project is defined by the following tasks and contributions:
For the tailored extraction of seaweed biomass, Fraunhofer scientists and partners from UCC will use their strong expertise in the field of fractionation to efficiently extract bioactive compounds such as polyphenols, poly-unsaturated fatty acids or bioactive peptides. Advanced separation techniques will be applied for high purity as well as for maintaining functional and nutritional quality. Fraunhofer IVV will support the optimization and combination of the best-performing
processes.

As leader of the work package for validation of food and feed ingredients building blocks Fraunhofer IVV will perform and coordinate different tasks together with the partners. The tasks are comprising: the analytical characterization of benchmark products and the creation of a requirements catalogue for MARMADE products, the food prototype development (such as meat and fish alternatives, beverages, and dairy alternatives) and feed formulation development. Furthermore, Fraunhofer IVV will be part of the Quality, Safety, Nutritional and Health assessments of the food prototypes and support the environmental, social, and economic
assessment.
